Unfortunately, you cannot split a coupon between payments. So, if the value of a coupon exceeds the cost of a payment, the remainder of the coupon is lost.

Note: If you are a developer (or have access to them), you could possibly write code that tracks which coupon amounts have been applied and which remain and automatically generates a new one-time coupon for recurring orders. But we cannot provide support for this kind of customization.
